Who am I?
Hi, I’m Jennifer and I love food, coffee, cats, wine and traveling. I’m also an eLearning junkie and am passionate about creating, what I like to call, a laptop lifestyle, that would allow my family and I to enjoy even more wanderlust adventures! While I don’t have any formal culinary training, I’ve learned from the best; my mother and grandmother. However, I do hold a Bachelor of Science in Elementary Education from William Jewell College, a Master of Arts in Teaching – Curriculum and Instruction from the University of Saint Mary and an Educational Specialist degree in Educational Technology from the University of Missouri, Columbia.
I love food, but cooking didn’t come natural for me. For years, I struggled with food intolerances, food allergies, and embracing a healthier lifestyle. In 2015, I decided to document my health journey by creating the Wanderlust and Wellness blog. Wanderlust and Wellness began as a food + travel blog that focused on Paleo and Gluten-free recipes that are all nut-free due to the founder’s severe nut allergy. Our message to our readers is geared towards eating well, living well, and enjoying life through traveling and living an active lifestyle. Our goal is to help our readers find the shade of Paleo that’s right for them. Everyone has their own bio-individuality, our goal is to help our readers shift away from asking, “Is this food Paleo” and instead ask “Is this food right for my body”. You’ll find recipes that embrace a balanced lifestyle; sometimes sweet, sometimes savory, sometimes healthy, but always delicious.
I LOVE to travel! I love road trips, outdoor adventures, National Parks, you name it, we’re up for it! For me, life is all about eating well, living well, and traveling often! You’ll find snippets of our wanderlust adventures here at Wanderlust and Wellness, and hopefully even more in the coming future!

My entire professional career, over 19+ years, has been in the education industry, first starting out in the K-12 system before moving on to higher education at the university level. I’ve developed multiple online courses using a variety of curricular models as an instructional designer and have written and developed multiple online courses for both hybrid and online institutions. I continually participate in research and editorial responsibilities within the field, presenting nationally at the Online Learning Consortium International Conference on Online Learning, Summer Institute on Distance Learning and Instructional Technology, and the annual conference for the Association of Colleges for Tutoring and Learning Assistance. I’ve served in leadership positions overseeing a team of instructional designers for an entire university.
Anyone who’s spent time in the entrepreneurial world knows that online courses, or eLearning, is the wave of the future!
