Bacon Avocado Deviled Eggs

Ingredients

  • 6 hard boiled eggs (I always use the hormone free eggs)
  • 1 large (ripe avocado (or two medium))
  • 23 teaspoons of fresh lime juice (to taste)
  • 1 teaspoon pink Himalayan salt
  • 1/2 teaspoon black pepper (to taste)
  • 3 slices crispy bacon (I use nitrate free bacon)
  • 1 teaspoon finely chopped jalapeno pepper (OPTIONAL – if you want some heat)

Instructions

  1. Boil eggs and let cool
  2. Peel and slice eggs in half, lengthwise
  3. Keep 3-4 yolks and add to a small mixing bowl
  4. Add avocado, lime juice, salt, pepper, and optional jalapeno to bowl and mash together. I always taste the mixture and add any additional lime, salt or pepper as needed
  5. Spoon avocado mixture into the egg halves, top with crumbled bacon
