Blackening fish for the first time can be scary at first, to help ease your fears I created a tutorial- How to Blacken Mahi Mahi! Once we get past that initial fear, I am sure that this will be your next family favorite at the dinner table!
Ingredients Needed
- 1 tsp. garlic powder
- 1 tsp. oregano
- ½ tsp. cayenne pepper
- 1 tsp. smoked paprika
- 1 tsp. onion powder
- 1 tsp. cumin
- ½ tsp. pepper
- ½ tsp. salt
- 4 Mahi Mahi filets
- 4 Tbsp. avocado oil or other high-temp oil
How to make Blackened Mahi Mahi Nuggets
- In a small bowl, combine the blackening seasonings – garlic powder, oregano, cayenne pepper, smoked paprika, onion powder, cumin, pepper, and salt; stir to combine.
- Generously season both sides of the Mahi Mahi filets, then cut into 1-inch chunks.
- Heat the oil in a large skillet over medium-high heat.
- Once the oil is hot, add Mahi Mahi nuggets to the hot oil and cook for 1-2 minutes on one side – then flip and cook for another 1-2 minutes on the other side.
- Once the internal temperature reaches 137 degrees F., remove and serve immediately with your favorite seafood dipping sauce.

Is blackening the same as burning?
Nope! Although the exterior may look burnt, the blackened color is actually just charred seasonings and cooking oil.
Can I use a fish other than Mahi Mahi?
Of course! Any white fish or cod will substitute.
What does it mean to “blacken” a fish?
It just means adding a quick sear on either side of the fish! It is meant to add some crispness to the outside to contrast with the flakiness of the fish on the inside.
