Cucumber Tuna Cups

Ingredients

  • 3 ounce packet of wild albacore tuna
  • 12 cucumbers
  • 3 tablespoons of Paleo mayo
  • 1 teaspoon of dijon mustard
  • 1/4 teaspoon pink Himalayan salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dill weed

Instructions

  1. Slice the cucumber(s) into 1/2 to 1 inch thick slices
  2. Using a melon baller, scoop out the center of each cucumber slice, leaving the bottom intact
  3. In a small bowl, mix the tuna, mayo, mustard, salt, pepper, and dill weed
  4. Spoon out about 1 tablespoon of the tuna mixture and place into the cucumber cups
