Street corn is such a popular dish and can be transformed into just about any dish, like Grilled Mexican Street Corn or Mexican Street Corn Beef Casserole.

Ingredients Needed
- ½ cup mayonnaise
- ½ cup sour cream
- ½ tsp. salt
- 1 tsp. cumin
- ½ tsp. lime juice
- ½ tsp. chili powder
- 2 cups fresh or frozen sweet corn
- 1 Tbsp. chopped cilantro
- ½ cup cotija cheese – crumbled
- Tortilla chips
How to make Mexican Street Corn Dip
- In a medium-sized mixing bowl, add the mayonnaise, sour cream, salt, cumin, lime juice, and chili powder. Stir to combine.
- If using frozen corn, heat in the microwave for 3 minutes or until warmed. If using corn on the cob, grill or boil the corn until tender, then cut the corn from the cob.
- Add the corn to the bowl with the other ingredients, and stir to combine.
- Top with crumbled cotija cheese, chopped cilantro and a splash of lime juice and serve with tortilla chips.

Can I make Mexican Street Corn Dip ahead of time?
Yes! You can mix together everything ahead of time, except for the last step. Refrigerate in an air-tight container and then when ready to serve, add in the last step of the recipe and serve.
Recipe notes
- If using frozen corn, thaw it out prior to adding to the dip. You can thaw it out but microwaving for just a few minutes, then drain off any excess liquid.
