Nut-free Blueberry Energy Bars


Description

The perfect energy bar with no nut ingredients.

Ingredients

  • 20 Medjool dates (pitted)
  • 1 cup dried blueberries
  • 2 tablespoons chia seeds
  • 1/2 teaspoon cinnamon
  • 1 cup raw pumpkin seeds

Instructions

  1. Add dates, blueberries, chia seeds, pumpkin seeds, and cinnamon to a food processor, pulse until the ingredients mix together. (You may want to pause between pulses and break up the mixture with a spatula)
  2. Press the mixture into a lined (I used parchment paper) 8×8 dish
  3. Refrigerate for 30 minutes and then cut into bars
