Paleo chipotle mini burgers on a baking sheet

Chipotle Mini-Burgers

These chipotle mini-burgers are a delicious Paleo-friendly bite-sized appetizer – perfect for game day!


  • 1 pound ground beef (I used Certified Angus Beef® brand ground sirloin)
  • 1/3 cup chopped white onion
  • 5 slices bacon
  • 1 Tbsp. steak seasoning
  • 10 cherry tomatoes
  • 1/2 cup guacamole
  • 1/4 cup Chipotle Mayo
  • Bamboo wooden skewers


  1. Preheat oven to 400 degrees F.
  2. Cook bacon until crispy, remove and set aside. Do not discard bacon grease.
  3. Add chopped onions to bacon grease and cook on medium heat until browned.
  4. Add hamburger, browned onions, and steak seasoning to a medium-sized bowl and mix well to combine.
  5. Form hamburger mixture into tablespoon-sized balls and place onto a lined or nonstick baking sheet.
  6. Bake in the oven for 10 minutes, remove and let cool.
  7. While meatballs are cooking, slice bacon into small squares, one for each meatball.
  8. Slice cherry tomatoes in half, one for each meatball.
  9. Once meatballs have cooked, start assembling the skewers.
  10. Starting from the bottom of the skewer and going up, first thread through the tomato half, then bacon. Put a small amount of guacamole and chipotle mayo on top of a meatball, then slide the skewer through the meatball. Continue until you have all of the mini-burgers assembled.
