When I first changed up my diet I was so sad about giving up my ranch dressing (unhealthy food relationships) but then I realized I could make my own, with better ingredients, and STILL enjoy my ranch dressing! Boom!
I’ve been intrigued by rainbow carrots these days. After researching their health benefits, I decided to definitely include them with this dish. Rainbow carrots pack a powerful punch when it comes to nutrients. Here’s a breakdown of what they offer:
The nutrients: Carrots are jammed with a wealth of nutrients, and medium-sized sticks are only 25 calories. Standard orange carrots contain vitamin A, and the other hued carrots are equally healthy. Here’s a brief break-down:
- Orange: Beta and alpha carotene pigment. This promotes vitamin A production by the body, which is essential for healthy eyes.
- Purple: Anthocyanin, beta and alpha carotene pigment. Purple carrots typically have an orange core, and their pigment-related nutrients may provide additional vitamin A and prevent heart disease.
- Red: Lycopene and beta-carotene pigment. Lycopene is the same red pigment that gives tomatoes their deep color and is linked to a lower risk of certain cancers, such as prostate cancer.
- Yellow: Xanthophykks and lutein. Both are linked to cancer prevention and better eye health.
- White: The nutrients don’t come from the pigment but from the fiber, which promotes healthy digestion.

Recipe:
Paleo Ranch Dressing & Vegetables
Ingredients
- Dairy-free Paleo Ranch Dressing
- Assorted vegetables
- 1 small pumpkin (seeded and scraped clean)
Instructions
- Mix up 2 batches of the Dairy-free Paleo Ranch Dressing
- Cut up assorted vegetables.
- Cut the top off of the pumpkin and clean out the inside by removing all seeds. You'll want the inside nice and clean.
- Pour ranch dressing into pumpkin.
- Arrange vegetables onto a serving platter and place the pumpkin with the ranch in the center of the vegetables.
- Keep refrigerated until ready to serve.
- Store any remaining ranch in a mason jar.
