Spinach Sausage Egg Muffins

Ingredients

  • 8 organic eggs
  • 1 lb. breakfast sausage
  • 1 cup fresh spinach
  • 1/3 cup chopped white onion
  • 1/3 cup shredded mozzarella cheese
  • 1/4 tsp. pink Himalayan salt
  • 1/4 tsp. ground black pepper
  • 1/2 cup canned coconut milk

Instructions

  1. Preheat oven to 375 degrees F.
  2. Grease a 12 cup muffin tin with coconut oil.
  3. Cook the breakfast sausage and set aside.
  4. In a large mixing bowl, add the eggs, salt, and pepper and whisk to combine.
  5. Add in the remaining ingredients and whisk lightly again to combine.
  6. Pour the egg mixture into the muffin tins, filling to the top.
  7. Bake for 25 minutes.
  8. Remove from oven, let cool and serve.
