Crispy Baked Mahi Mahi

• Eggs • Bread crumbs • Lemon-pepper seasoning • Mahi Mahi • Olive oil

INGREDIENTS

In medium-sized bowl, whisk the eggs and water until blended. In a shallow bowl or dish, mix the bread crumbs, lemon-pepper seasoning, and garlic salt.

Working one fillet at a time, dip the Mahi Mahi fillets into the egg mixture, coating the entrie fillet. Then, dip into the bread crumb mixture, coating completely.

Place the fillets onto a lined baking sheet. Spray the fillets with the olive oil cooking spray.

Bake 10 minutes, then carefully flip the fillets and bake for an additional 5 to 10 minutes, or until fish flakes easily with fork and the internal temperature reaches 137 degrees F.

Serve immediately. Garnish with lemon slices and chopped parsley, if desired.
