Mexican Street Corn Dip Story

This Mexican Street Corn Dip has all the flavors of traditional street corn in a delicious party appetizer dip! It’s perfect for summer backyard parties or Cinco de Mayo celebrations.

• mayonnaise • sour cream • salt • cumin • lime juice

INGREDIENTS

In a medium-sized mixing bowl, add the mayonnaise, sour cream, salt, cumin, lime juice, and chili powder. Stir to combine.

If using frozen corn, heat in the microwave for 3 minutes or until warmed. If using corn on the cob, grill or boil the corn until tender, then cut the corn from the cob.

Add the corn to the bowl with the other ingredients, and stir to combine.

Top with crumbled cotija cheese, chopped cilantro and a splash of lime juice and serve with tortilla chips.

You can mix together everything ahead of time, except for the last step. Refrigerate in an air-tight container and when ready to serve, add in the last step.
