I’m a huge fan of brie. It’s underappreciated, in my opinion. It just has so much flavor and is the perfect way to feed your family and friends. I love that it’s simple to make and it just has such an elegance about it, too. Most people that that baked brie is hard to make but they couldn’t be more wrong!
Ingredients Needed
- 6 Roma tomatoes, diced
- 1/3 cup basil leaves, roughly chopped
- 1 Tbsp. minced garlic
- 2 Tbsp balsamic vinegar – divided
- 2 Tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 8 oz. brie wheel
- Baguette – sliced
How to make this simple Brie Appetizer
- Preheat the oven to 400 degrees F.
- In a medium bowl, add the tomatoes, basil, garlic, 1 Tbsp. balsamic vinegar, olive oil, vinegar, and salt. Stir gently to combine; set aside to marinate for 15-30 minutes.
- Spray or oil an 8×8 oven safe baking dish. Unwrap the brie wheel and place in the center of the dish. Place the dish into the oven and cook for 15 minutes, then remove.
- Allow to cool for 5 minutes. Using a slotted spoon, scoop the bruschetta topping onto the center of the brie. Spread over the top, drizzle with additional balsamic vinegar and serve immediately with the sliced baguette.
