Ingredients Needed
- 3 Tbsp. red wine vinegar
- ⅓ cup olive oil
- ¼ cup fresh cranberries
- 1 Tbsp. Dijon mustard
- ½ tsp. minced garlic
- ½ tsp. salt
- ½ tsp. pepper
- 2 Tbsp. water
- 24 oz. fresh brussel sprouts
- 1 cup swiss cheese cubes
- ½ cup toasted almonds
- ½ cup pomegranate seeds
How to make the Best Thanksgiving Salad
- In a blender or food processor, combine the vinegar, oil, cranberries, dijon mustard, garlic, salt, pepper, and water. Process until smooth, then transfer to a small bowl or jar and set aside.
- Using a sharp knife or mandoline, cut the base off of each brussel sprout. Then, slice lengthwise from root to tip and continue slicing until they’re cut down into a “shaved” appearance. Add shaved brussel sprouts to a large mixing bowl.
- Add the swiss cheese, toasted almonds, and pomegranate seeds to the bowl and stir to combine.
- Pour the cranberry dressing over the brussel sprout salad and toss to fully coat.
- Let chill in the refrigerator for about 15 minutes, then toss and serve.
Recipe FAQs and Notes
Can you use dried cranberries for this salad recipe?
Of course. Fresh cranberries are what the ingredients call for but dried cranberries will work just fine, too.
How do you store leftover salad?
You need to store this leftover salad in an airtight container in the fridge. This will keep it fresh and ready for the next timat you’re going to eat it.
What other ingredients can you add to this salad?
Sesame seeds could be a great addition for some extra crunch. You can also add in some parmesan cheese for flavoring, too.
