Ingredients Needed
- 12 slices white bread
- 12 slices Black Forest ham
- 1 1/2 cups pimento cheese – softened at room temperature
- 1 English cucumber – thinly sliced
- Fresh chives for garnish
How to make Mini Sandwiches For a Party
- To help your bread cut easily, place bread into the freezer for about 30 minutes prior to preparing the sandwiches.
- Remove bread from freezer after 30 minutes, then line up 6 slices of bread. Top each one with two slices of ham, and then spread pimento cheese over the ham. Top with sliced cucumbers, try not to overlap and just lay them in a single layer on top of the cheese. Top each sandwich with another piece of bread.
- Place sandwiches onto a tray and refrigerate for an hour until chilled.
- Trim off crusts, and cut each large sandwich into four rectangles.
- Tie one chive around each rectangle and serve on a party platter.

Absolutely. I like to use ham but you can easily use turkey, chicken, or even hard salami as well. If you’re not a fan of meat, just add extra veggies and call it a day.

Will these sandwiches turn soggy if stored?
These mini sandwiches are best if they’re eaten right away. While you can store them in an airtight container for a short amount of time, they will start to turn soggy after a while.
