We’ve taken our favorite blackened Mahi Mahi and transformed it into a delicious fish sandwich! This Mahi fish sandwich has such amazing flavors, it’s going to be one of your new favorite recipes!
Ingredients needed
- 4 Mahi Mahi fillets – thawed
- 4 Tbsp. avocado oil
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1/2 tsp. cayenne
- 1 tsp. smoked paprika
- 1 tsp. onion powder
- 1 tsp. cumin
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- brioche buns
Quick “remoulade” sauce
- 1/2 cup mayo
- 1 1/2 Tsp. ketchup
- 2 tsp. cajun seasoning
- 1 Tbsp. dill relish
How to make a blackened Mahi sandwich
- In a small bowl, combine the mayo, ketchup, cajun seasoning, and dill relish. Stir to combine, then cover and refrigerate until ready to use.
- In a separate small bowl, combine the blackening spice mixture and stir to combine.
- Before cooking, heavily coat both sides of the Mahi Mahi fillets with the blackening spices.
- Add 4 tablespoons of avocado oil to the cast iron skillet and heat over medium-high heat.
- Add Mahi Mahi fillets to the hot oil and cook for 3-4 minutes on one side – then flip and cook for another 3-4 minutes on the other side.
- After the fillets have cooked on both sides, you can check both the internal temperature and use a fork to pull apart a small part of the fillet to see if it’s white and flaked. The optimal internal temperature for Mahi Mahi is 137 degrees F. If you feel like the crust is getting too blackened, you can continue to flip until done. - Add the blackened Mahi fillets to the brioche buns, top with sauce and serve.

Is blackened fish burnt?
No! It may look burnt, but the blackened color is actually the charred spices combined with the cooking oil.
Is blackened seasoning spicy?
This blackened seasoning in particular does carry a little kick of heat, but it’s not intolerable.
Can I use a fish other than Mahi Mahi?
Yes, any white fish would work such as cod or tilapia.
