These air fryer Mexican pizzas are a close copycat to your favorite fast-food Mexican pizza! Crispy flour tortillas filled with a zesty filling and topped enchilada sauce and delicious gooey melted cheese! Another easy pizza recipe, and a delicious air fryer recipe!
Remember those delicious Mexican pizzas at Taco Bell, they were my favorite! I wanted to try to re-create these using my air fryer, and I think I got pretty close!
Ingredients Needed:
- 1 lb. ground beef
- 1 packet taco seasoning
- 12 – 8 in. flour tortillas
- 16 oz. refried beans
- 10 oz. enchilada sauce
- 2 cups shredded cheddar cheese
- 3 Roma tomatoes – diced
- chopped green onion
How to make air fryer Mexican pizzas
- Preheat oven to 400 degrees F. Place six flour tortillas onto a baking sheet and bake in the preheated oven for about 4 minutes, or until crispy. Repeat the process for the other six tortillas. Set aside.
- Add the ground beef to a skillet and brown. Drain any remaining grease, then add in the taco seasoning packet and about 1/4 cup of water. Stir to combine and bring to a simmer.
- Begin to assemble the Mexican pizzas.
- Take one flour tortilla and spread 1/6 of the refried beans, covering side to side.
- Add 1/6 of the seasoned and browned meat and spread to cover side to side.
- Place another flour tortilla on top of the meat and bean mixture.
- Spread 1/6 of the enchilada sauce onto the top of that flour tortilla, spreading from side to side.
- Top with 1/6 of the shredded cheese, covering the entire tortilla. Top with a few diced tomatoes and drizzle with a little enchilada sauce.
- Place the Mexican pizza into an oiled air fryer basket and cook at 375 degrees F. for about 6-8 minutes or until the cheese is nicely melted.
- Remove, top with chopped green onions.
- Repeat this process for the remaining five pizzas. You can keep the finished pizzas on a baking sheet in a warm oven until all are cooked and ready to serve.

Is cooking in an air fryer healthy?
Because there’s less oil, there’s less chance of consuming potential oils with harmful compounds. Air fryers heat more rapidly than traditional ovens so there’s no waiting on time for pre-heating. Air fryers also tend to cook about three to five times faster than a conventional oven.
Can you stack food in an air fryer?
You can stack some items, such as french fries or vegetables. However, food cooks better when spaced apart. For best cooking results, the food needs space for the hot air to circulate around it.
Recipe variations:
- Add in shredded white quesadilla cheese for an even cheesier Mexican pizza.
- Pre-cook the flour tortillas in the oven or the air fryer to get them nice and crispy before assembling the pizza.
