We’re all familiar with the classic egg salad, especially for dinner parties, but what if we elevated this dish just a bit and made it an elegant party appetizer?
Crostinis are simple finger foods that appear “fancy”, plus this egg salad recipe has a twist on the traditional ingredients that elevate the flavors.
Ingredients Needed
- French bread baguette sliced
- 8 hard-boiled eggs, peeled & coarsely chopped
- 4 oz. crumbled Gorgonzola cheese
- ¼ cup mayonnaise
- 1 Tbsp. dijon mustard
- ¼ tsp. salt
- ¼ tsp. pepper
- Fresh dill, parsley, or arugula
How to make egg salad crostini
- Preheat oven to 350 degrees F.
- Slice the baguette into ½ inch slices, place onto a baking sheet, and toast them for 5 minutes. Remove from oven and set aside.
- Boil the eggs, peel, and chop.
- In a mixing bowl, add the chopped eggs, Gorgonzola cheese, mayonnaise, dijon mustard, salt, and pepper. Stir to combine.
- Top each toasted crostini with the egg salad mixture. Garnish with fresh greens and serve.

Can I make the egg salad ahead of time?
Yes! You can make the egg salad ahead of time and refrigerate in an airtight container. If the egg salad gets watery, simply drain the water off then stir.
How do you thicken egg salad?
If the egg salad is too runny, it’s most likely because it has too much mayonnaise. You can add more hard-boiled eggs to help thicken it. Or, you can refrigerate it for a bit to thicken the mayonnaise up if the egg salad is room temperature.

- Use blue cheese in place of gorgonzola, if needed.
