Fresh tomatoes and zucchinis seem to be plentiful at farmers markets this time of year, or maybe even in your own garden. This recipe, plus all of our farmers market recipes, is a great way to make use of your produce bounty!

Easy gluten-free marinated tomato salad

I don’t know about you, but when it comes to cooking in the summer, I want two things – quick and easy. I’d rather not turn the oven on if I don’t have to and I want an easy recipe. This gluten-free marinated tomato salad is the perfect summer side dish, or even add some shredded rotisserie chicken and turn it into an easy gluten-free dinner. Made with less than ten ingredients – you’ll have dinner ready in under an hour.

Zucchini noodles are also one of my favorite gluten-free cooking swaps for traditional pasta. You can eat them cold, like in this salad, or cook them in a delicious one-pot gluten-free dinner like my blackened lemon shrimp with zucchini noodles.
