Summertime means lots of fresh produce, which is perfect for this gluten-free marinated tomato salad. Fresh tomatoes and zucchinis seem to be plentiful at farmers markets this time of year, or maybe even in your own garden. This recipe, plus all of our farmers market recipes, is a great way to make use of your produce bounty!
Easy gluten-free marinated tomato salad
I don’t know about you, but when it comes to cooking in the summer, I want two things – quick and easy. I’d rather not turn the oven on if I don’t have to and I want an easy recipe. This gluten-free marinated tomato salad is the perfect summer side dish, or even add some shredded rotisserie chicken and turn it into an easy gluten-free dinner. Made with less than ten ingredients – you’ll have dinner ready in under an hour.
Zucchini noodles are also one of my favorite gluten-free cooking swaps for traditional pasta. You can eat them cold, like in this salad, or cook them in a delicious one-pot gluten-free dinner like my blackened lemon shrimp with zucchini noodles.
Ingredients needed
For this recipe, you’ll need the following ingredients:
- 1 pint of cherry tomatoes
- 1/3 cup olive oil
- 2 Tbsp. balsamic vinegar
- 1/4 tsp. minced garlic
- 1 Tbsp. fresh basil – chopped
- 1 Tbsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 large zucchini
- 8 oz. fresh mozzarella cheese
How to make gluten-free marinated tomato salad
First, add the cherry tomatoes to a small mixing bowl. Then, add the olive oil, balsamic vinegar, minced garlic, chopped fresh basil, oregano, salt, and pepper, then stir to combine. Let the tomatoes marinate for at least 30 minutes.
Next, while the tomatoes are marinating, use a spiralizer to cut your zucchini into noodles.
Place the zucchini noodles into a large bowl. After the tomatoes have marinated for at least 30 minutes, pour the mixture over the zucchini noodles and stir to combine. Cut the fresh mozzarella into chunks and add to the bowl. Serve immediately.

Yes! You can spiralize the zucchini noodles ahead of time, then store in an air-tight container in the refrigerator for up to three days.
Yes! If you have an abundant supply of zucchinis, you can spiralize them into noodles and then freeze for later use. Simple pat them dry after spiralizing, then place in an air-tight container and freeze for up to one year. When ready to use, remove from the freezer and let fully thaw.
Once all ingredients are mixed into the salad, it will keep for 2-3 days in the refrigerator. The vinegar will begin to break down the zucchini noodles, so serving the day of will yield better results.

A delicious summer farmers market recipe - this gluten-free marinated tomato salad uses fresh tomatoes and zucchini combined in a delicious marinade and paired with fresh mozzarella.
Ingredients
- 1 pint cherry tomatoes
- 1/3 cup olive oil
- 2 Tbsp. balsamic vinegar
- 1/4 tsp. minced garlic
- 1 Tbsp. fresh basil - chopped
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 Tbsp. dried oregano
- 1 large zucchini
- 8 oz. fresh mozzarella
Instructions
- In a small mixing bowl, add the cherry tomatoes, olive oil, balsamic vinegar, minced garlic, fresh chopped basil, salt, pepper, and oregano. Stir to combine, then let sit and marinate for at least 30 minutes.
- While the tomatoes are marinating, use a spiralizer to cut your zucchini into noodles. Place the zucchini noodles into a large mixing bowl.
- When the tomatoes are ready, pour them into the bowl with the zucchini noodles and stir to combine.
- Then, cut the fresh mozzarella into small chunks, add to the bowl, and serve immediately.
Notes
- If cherry tomatoes are not available - you can use large tomatoes and simply cut them into small chunks.
- If you do not have a spiralizer, you can cut the zucchini into small chunks as well.
- Dried herbs can be swapped for fresh herbs.
