Gluten-Free Mini Apple Galettes
Sometimes I like to share my desserts, and other times I like to have my own little individual dessert all to myself! These gluten-free mini apple galettes are just so dang cute and are just the right size for your after dinner dessert fix. These mini galettes also use the same dough that can be found in my gluten-free galette dough recipe tutorial – which makes gluten-free baking easy peasy!
Ingredients for gluten-free mini apple galettes
- 4 Granny Smith apples
- 1/4 cup + 1/2 tsp. sugar
- 1/2 tsp. cinnamon
- 1/4 cup brown sugar
- 1 3/4 cup Bob’s Red Mill Gluten-free 1 to 1 baking flour
- 1/2 tsp. salt
- 1/2 cup unsalted butter
- 1/3 cup cold water
- 1 egg white
- decorating sugar
How to make gluten-free galette dough

- Add the flour, 1/2 tsp. sugar, and salt to a large mixing bowl.
- Cut the butter into small chunks and add to the bowl. Using a pastry cutter, cut in the butter until you get coarse crumbs.
- Add the cold water and stir the dough until it comes together. You want to the dough to come together but not be too wet or too dry.
- Press the dough into a disc shape, wrap in plastic wrap, and refrigerate for 20 minutes.
How to assemble the gluten-free mini apple galettes
While the dough is refrigerating, prepare the apple filling. Peel and core the apples, then slice lengthwise into thin slices and add to a large bowl. Add the sugar, cinnamon, and brown sugar and stir to coat the apples. Set aside.
Remove the dough from the refrigerator. Remove the dough from the refrigerator. Place a piece of parchment paper onto your rolling surface and flour lightly. Next, divide the dough into four equal balls.
Roll out each dough ball into a 4 to 6-inch circle, with the dough being about 1/8″ thick. Fill the center of the dough with about 3/4 cup of the apple mixture. Then, gently fold up the sides of the galette working your way around the galette. If the sides crack, simply pinch them together.
Continue until all four gluten-free mini apple galettes are assembled. Whisk one egg white and brush onto each galette. Then, sprinkle with decorating sugar.
Transfer the galettes, with the parchment paper, to a baking sheet and bake for 35-40 minutes or until the crust is golden and flaky.
When finished baking, remove from oven and serve warm. Top with vanilla ice cream, if preferred.

- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 cup unsalted butter
- 1/3 cup cold water
- 1 egg white

Instructions
- Preheat oven to 375 degrees F.
- In a large mixing bowl, add the flour, 1 tablespoon sugar, and salt - mix to combine.
- Cut the butter into small chunks, then add to the flour mixture. Using a pastry blender, cut the butter into the flour until you get coarse crumbs.
- Next, add the cold water and stir until the dough comes together. You want the dough to come together but not be too wet or too dry.
- Shape the dough into a disc, cover in plastic wrap, and refrigerate for 20 minutes.
- While the dough is refrigerating, prepare the apple filling.

- Then, gently fold up the edges of the galette, pinching together any cracks on the side. Once they're all assembled, transfer the parchment paper and galettes to a baking sheet.
- Whisk the egg white and brush onto the edges of each galette. Then, sprinkle with decorating sugar.
- Bake for 35-40 minutes or until the crust is golden and flaky.
- Remove from oven, serve warm with vanilla ice cream, if preferred.
Notes
- Roll the dough to about 1/8" thick
- Be sure to use a 1 to 1 gluten-free baking flour.
