Recipe FAQs and Notes
Is the Mahi Mahi eaten raw?
Although there is no formal cooking process through heat, leaving the fish in the acidic marinade alters the proteins in the fish very similar to heating. The citrus juices essentially “cook” the fish without using heat.
Can you use any fish for Ceviche?
As long as the fish is “sashimi-grade” or “sushi-grade,” then you can! These grades just ensure that the food is safe to eat raw.
Can you “overcook” Ceviche?
While still good, if you leave the fish in the marinade for too long, it starts to lose a lot of its moisture, causing it to “overcook”.
