How to build a spring charcuterie board
To build a spring charcuterie board, the key is to capture the colors and feelings of spring. This means fresh fruits and vegetables, and bright colors. Below is a list of what I used in this holiday graze board, but feel free to mix in what you prefer.
- Choose 1-2 types of meat. I wanted to focus on fruits and vegetables and less on meats, so I minimally used salami for this board.
- Choose 1-2 additional kinds of cheese – I opted not to use cheese on this particular board and instead let the dips be the focus. If you want to incorporate cheese, I would suggest choosing cheese blends that incorporate fruits like a blueberry cheddar or apricot stilton
- Choose 2-3 seasonal fruits – to capture that spring feeling, stick with fresh fruits
- Choose 2-4 seasonal vegetables – for spring, I used fresh carrots, colored cauliflower, cucumbers, radishes, snap peas, and asparagus to capture that spring green feeling
- Choose 1-2 types of spreads – used a dill dip and a lemon beetroot hummus
- Choose 1 type of cracker
- Choose 1-2 extras to fill in and garnish your board – you can use fresh herbs or spring flowers to give it that spring touch
How much meat and cheese per person?
An easy rule of thumb to follow is to allow
- 3-4 slices of meat per person in a variety of flavors and textures.

Now that you’ve selected all of your ingredients, it’s time to assemble the perfect spread! Arranging the items on the board is key to creating a visually stunning platter. For a spring charcuterie board, I arranged by coordinating colors. Keep similar colors on opposing sides of the board and create a beautiful rainbow using your spring fruits and vegetables. Start by placing your bowls in the center and arrange your fruits and vegetables from there. Because the meat isn’t the start of the show, with this board fill in any gaps with folded salami or salami roses, as well as crackers. Finally, fill in any remaining space with small garnishes such as fresh herbs or spring flowers.
How to fold meat on a Charcuterie Board
Again, there’s no right or wrong way to fold the meat on a charcuterie board. But if you want to really impress your guests with this super easy trick, you can create salami roses!
How to make salami roses
- You’ll need four thin slices of salami for each rose.
- Fold each of the salami slices in half.
- Next, lay one folded salami down, then lay another on top of it, covering one half. Continue this until you have a ‘train’ of salami. Then, carefully roll up and place onto your board standing up. Secure with a toothpick, if needed.

This will depend on how many people you are serving. If you’re serving 2-4 people, a small 12-14 inch round board would be a sufficient size. If you’re serving a larger group, you’ll want to go with a larger round board or large paddle-style board.
How early can you prepare a charcuterie board?
You can slice the cheese and any fruits the night before and refrigerate them in an air-tight container overnight. You can also fold any meats and place them into a glass storage container to refrigerate overnight.
