Gluten-Free Lemon Bars Recipe

Ingredients needed
For this recipe, you’ll need the following ingredients:
- 15 Medjool dates – pitted
- 2/3 cup gluten-free rolled oats
- 2 tsp. cinnamon
- 4 Tbsp. melted coconut oil
- 3 egg yolks
- 1 14-oz. can
sweetened condensed milk - 1 Tbsp. lemon zest
- 1/2 cup fresh lemon juice
How to make gluten-free lemon bars
- Preheat oven to 350 degrees F.
- In a food processor, add the Medjool dates, oats, cinnamon, and coconut oil. Pulse until combined.
3. Grease an 8×8 baking dish and press the crust into the bottom of the pan. Use a spoon to smooth out evenly.
4. In a medium-sized bowl, add the egg yolk, sweetened condensed milk, lemon zest, and fresh lemon juice. Whisk by hand until well-combined.
5. Pour filling over the crust and bake for 45 minutes or until a knife comes out clean from the center.
6. Remove from oven and let fully cool. Slice into squares and serve. You can garnish with small pieces of lemon if desired.

Yes – rolled oats are by nature gluten-free. However, if you need to ensure there is no chance of cross-contamination during the packaging process, I would suggest purchasing rolled oats with the gluten-free label – like Bob’s Red Mill’s gluten-free rolled oats.
