Gluten-free Air Fryer Coconut Shrimp
Cooking with an air fryer has literally changed the game for my weeknight dinners. You would think as a food blogger I would love to cook dinner every night, but I dread figuring out dinner every night probably just as much as all of you! So, when I finally tried out an air fryer that was gifted to us I quickly fell in love because dinnertime just became SO MUCH EASIER!

Ingredients needed for gluten-free coconut shrimp
For this recipe, you’ll need the following ingredients:
- 12 oz large precooked shrimp – thawed
- 1 cup sweetened shredded coconut
- 1/2 cup gluten-free flour blend
- 1/2 cup gluten-free panko bread crumbs
- 3 eggs
- 1/4 tsp. salt
- 1/4 tsp. pepper
- Cooking spray or olive oil in a spray bottle
- Pineapple Aioli
How to make air fryer coconut shrimp.
- First, add the shredded coconut to one bowl, add the three eggs to another bowl, and add the gluten-free flour and gluten-free panko bread crumbs to another. Add the salt and pepper to the eggs and whisk to combine.
2. Next, spray the air fryer basket with cooking spray or olive oil.
3. Begin to coat the shrimp. First, dredge the shrimp in the flour and bread crumb mixture. Then, dip into the egg. Finally, dredge in the shredded coconut and place into the air fryer basket. Continue this process until all of the shrimp are coated. Give the shrimp a quick spray with cooking spray or olive oil and then cook for 6 minutes at 400 degrees F., flipping half way.
4. Make the pineapple aioli dipping sauce while the shrimp are cooking.
5. When done, remove from the air fryer basket and serve immediately.

It depends on the specific recipe, but this recipe and all of my coconut shrimp recipes are gluten free.
Yes, you could cook the coconut shrimp in the air fryer ahead of time. If it’s just a few hours ahead of time you could then pop them back into the air fryer for 2-3 minutes at 350 degrees F. to warm up and add some crisp back into the crust. If you need to make them the day before, refrigerate them in an air-tight container then reheat them in the air fryer for about 3-4 minutes at 350 degrees F.

Notes
- Use sweetened shredded coconut for a sweet taste. If you would like less sugar, use unsweetened shredded coconut.
- Any gluten-free flour blend or tapioca flour will work.
