This easy air fryer coconut shrimp is gluten-free and cooks in under 10 minutes! It’s the perfect party appetizer or quick weeknight dinner. Just pop them in your air fryer and you’ll have dinner on the table in under 15 minutes!

Gluten-free Air Fryer Coconut Shrimp

Cooking with an air fryer has literally changed the game for my weeknight dinners. You would think as a food blogger I would love to cook dinner every night, but I dread figuring out dinner every night probably just as much as all of you! So, when I finally tried out an air fryer that was gifted to us I quickly fell in love because dinnertime just became SO MUCH EASIER!

And I’m not talking frozen bagel bites. I’m talking Air Fryer Sticky Asian Beef and Gluten-free Air Fryer Nashville Chicken Bites! Absolutely delicious gluten-free recipes you can make in under an hour, sometimes under 30 minutes just with your air fryer!

Ingredients needed for gluten-free coconut shrimp

For this recipe, you’ll need the following ingredients:

  • 12 oz large precooked shrimp – thawed
  • 1 cup sweetened shredded coconut
  • 1/2 cup gluten-free flour blend
  • 1/2 cup gluten-free panko bread crumbs
  • 3 eggs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • Cooking spray or olive oil in a spray bottle
  • Pineapple Aioli

How to make air fryer coconut shrimp.

  1. First, add the shredded coconut to one bowl, add the three eggs to another bowl, and add the gluten-free flour and gluten-free panko bread crumbs to another. Add the salt and pepper to the eggs and whisk to combine.

2. Next, spray the air fryer basket with cooking spray or olive oil.

3. Begin to coat the shrimp. First, dredge the shrimp in the flour and bread crumb mixture. Then, dip into the egg. Finally, dredge in the shredded coconut and place into the air fryer basket. Continue this process until all of the shrimp are coated. Give the shrimp a quick spray with cooking spray or olive oil and then cook for 6 minutes at 400 degrees F., flipping half way.

4. Make the pineapple aioli dipping sauce while the shrimp are cooking.

5. When done, remove from the air fryer basket and serve immediately.

Recipe FAQs

What to dip coconut shrimp in?

My favorite dipping sauces for coconut shrimp are flavored aioli sauces. I recommend the pineapple aioli for this recipe, or you could use the aioli in my coconut shrimp with key lime aioli recipe or coconut shrimp with spicy honey mustard sauce.

Do air fryers work well?

Yes! Food properly cooked in an air fryer will turn out just as moist and crispy as food prepared with more traditional methods.

Are coconut shrimp gluten free?

It depends on the specific recipe, but this recipe and all of my coconut shrimp recipes are gluten free.

Can coconut shrimp be made ahead of time?

Yes, you could cook the coconut shrimp in the air fryer ahead of time. If it’s just a few hours ahead of time you could then pop them back into the air fryer for 2-3 minutes at 350 degrees F. to warm up and add some crisp back into the crust. If you need to make them the day before, refrigerate them in an air-tight container then reheat them in the air fryer for about 3-4 minutes at 350 degrees F.

Notes

  • Use sweetened shredded coconut for a sweet taste. If you would like less sugar, use unsweetened shredded coconut. 
  • Any gluten-free flour blend or tapioca flour will work.
