Ingredients Needed
- 4 Mahi Mahi fillets
- ½ tsp. salt
- ¼ tsp. pepper
- 1 Tbsp. Old Bay seasoning
- ½ cup unsalted butter – melted
- 4 sprigs fresh thyme
- 4 lemon slices
- 1 Tbsp. chopped fresh parsley
How to make Roasted Mahi Mahi
- Heat oven to 375°F.
- Grease the bottom of an 11×14 baking dish. Place the fillets into the dish.
- Season the fillets with the salt, pepper, and Old Bay seasoning. Drizzle the melted butter over the fillets.
- Place a sprig of thyme and lemon slice onto each fillet.
- Bake uncovered 15 to 20 minutes or until fish flakes easily with fork and reaches an internal temperature of 137 degrees F.
- Serve immediately, garnish with chopped parsley if desired.

Once the internal temperature reaches 137 degrees, the fish should be cooked all the way and ready to be taken out of the oven.
Why is my fish dry?
If you think that your fish is too dry, you more than likely overcooked your fish. Make sure that you’re not cooking it too long as that will dry out your fish quickly.
How do you store leftover fish?
Since this doesn’t have any type of breading or coating to worry about, you can store this in the fridge in a container with a lid and just reheat it in the microwave when you’re ready to eat it again.
