Who doesn’t love a delicious Reuben sandwich for St. Patrick’s Day, right? But, making a full corned beef into sandwiches can be a hassle.
Instead, make these super fun mini Reuben party appetizers! In just a few short steps! These are great for a party or just as a fun St. Patrick’s Day dinner at home! These would also go great with this Guinness Beer Cheese Dip or my St. Patrick’s Day Charcuterie Board.
Ingredients Needed
- 6 slices of rye bread
- 6 slices swiss cheese
- ½ pound sliced corned beef deli meat
- 1-2 cups sauerkraut
- ¼ cup Thousand Island dressing
- 24 baby sweet pickles
- 24 cocktail skewers
How to make mini Reuben party appetizers
- Preheat oven to 375 degrees F.
- Cut each slice of rye bread into four sections and place them onto a lined baking sheet.
- Cut the swiss cheese slices into quarters and place one on top of each bread square.
- Cut the corned beef slices in half, have smaller sections to work with, and then fold a piece onto each square.
- Place in oven and cook for about 5-6 minutes, just enough for the cheese to soften and begin to melt.
- Remove from the oven and let cool for a minute. Then, top each square with about 1 Tbsp. of sauerkraut.
- Next, add about 1 tsp. of Thousand Island dressing. Top with a baby sweet pickle and secure in place with a cocktail skewer.
- Transfer to a serving platter and serve.

Is a Reuben made with pastrami or corned beef?
A true Reuben is made with corned beef. However, many versions are made with pastrami. You can use either in this recipe.
Is Russian dressing the same as Thousand Island dressing?
While both have their own unique flavor, the main difference between the two is the use of pickles in Thousand Island dressing. Either dressing option can be used in this recipe.
Can I cook my own corned beef for these?
Of course! If you prefer to cook your own corned beef to use for these mini Reuben party appetizers, that will work as well. If you want the easier route, pick up high-quality sliced corned beef from your local deli.
